Backyard cheeses, one and all! We make cheese only with milk from our own cows and goats. Two of our cheeses are always single-milk: Bootleg Blue is made only with Jersey cow milk, and Silver Lining only with goat. These two cheeses are also relatively young, aging just 5 weeks or so. Some of our cheeses are made with mixed milk, meaning we blend cow and goat in varying proportions, depending on the time of the season. Wicker, Unison, and Wild Thing, made from either single or mixed-milk cheeses, are all aged 2 to 4 months.
To order, click on the picture of any cheese that interests you. Tasting information about each cheese is provided on the order page. All our cheese are different sizes. For the store, we'll cut and wrap pieces of between 6 ounces and 8 ounces, ready for pickup. We hope you'll come and taste them all!
