A cheesemaker is nothing without her pigs! I picked the KuneKune breed, and a meatier KunuKune-cross pig, for their lovable, amiable characters, moderate size, easy-keeping metabolisms, and sweetly delicious meat. These are great backyard pigs, as friendly as puppies, and just as entertaining, too. It also turns out, this breed carries a lot of the world's most incredible, creamy white fat—a Lardo lover's dream. Some people may find their fat quantity daunting, but we bake, eat, cure, and cook with it with gusto—and, so far, my cholesterol has improved every year!
I really can't say enough good things about my pigs. They make me laugh. They eat up my extra whey and failed cheeses. And they provide us with delicious food. I'm writing about them simply to share the joy—with recipes!
