Throughout every farm season, there are periods of too much and too little. When we have too much, we try to save for scarce times. 30 stone-fruit trees means many jars of peach and plum jam. Extra lemons make candied rinds and salt preserved whole fruits. Early and late green tomatoes can be fermented, pickled, and cooked to a sweet and spicy ketchup...you see where this is headed.
